A new restaurant collaboration is bringing handmade pasta and global street food together at Polaris, but it won’t be around forever.
Flour & Fetty’s is a limited-time pop-up from Chef Yash Kishinchand of Flour Modern Pasta Bar and ROOH, and Chef Damian Ettish of Fetty’s Street Food. The restaurant opened in October at 1540 Polaris Parkway, taking over the Flour space through the end of January 2027.
The concept combines Flour’s handmade noodles with the Thai, Southeast Asian and South African influences found in Fetty’s cooking. The result is a menu that moves between pasta, wok-fired dishes, curries and street food-inspired appetizers.
Some of the current menu highlights include Smashed Cucumbers with soy, sesame and smoked chili, Loaded Curry Tots topped with Massaman curry and green peppercorns, and Crispy Mushroom Spring Rolls with wood ear mushrooms, bean thread and shiitake. For pasta, there’s Miso Cacio e Pepe with Szechuan and black pepper, brown butter and pecorino, along with Short Rib Rendang Pappardelle featuring star anise, cinnamon and toasted coconut.
The wok menu has options like Jumbo Lump Crab Butter Fried Rice with charred vegetables and pickled chili, plus Panaeng Fish Curry with lemongrass, galangal, makrut lime and coconut. For dessert, diners can try Coconut Sticky Rice with mango lemongrass sorbet or Thai Tea Tres Leches.
Kishinchand opened Flour Modern Pasta Bar in 2024 after building his culinary career around handmade pasta and creative takes on familiar dishes. He is also part of the family behind ROOH, the Short North restaurant that opened in 2019.
Ettish founded Fetty’s Street Food in 2016. Originally from Cape Town, South Africa, he draws on the food and flavors he encountered while traveling through places including India, Thailand, and Vietnam. Fetty’s became known around Columbus for dishes such as Thai curries, South African samosas and chili paneer.
The chefs have worked together before, including collaborative dinners at ROOH in 2021 and 2023. This time, they’re bringing that partnership into a shared restaurant space for a few months.
In a statement announcing the pop-up, Kishinchand said he never wanted Flour to be limited to one style of food. He described the collaboration as a chance to explore the connections between different food cultures, his own culinary background and the techniques he’s learned throughout his career.
Flour & Fetty’s is scheduled to run through the end of January 2027. During the pop-up, Flour Modern Pasta Bar’s regular menu is not being served, so this is a temporary change for anyone who has visited the restaurant before.
The restaurant is currently open Wednesday and Thursday from 4:30 to 8 p.m., Friday and Saturday from 4:30 to 8:30 p.m., and Sunday from 4:30 to 8 p.m. It’s closed Mondays and Tuesdays.
